Chayote, known as vegetable pear, belongs to the gourd family. Although native to Central America, it is found all over the world.
This mild-tasting, pear-shaped squash is low in calories but rich in fiber, vitamins, and minerals. It can be kept at room temperature for two weeks, and in the fridge, it can last up to two months.
Chayote can be eaten raw or cooked in savory dishes like salads and soups.
Stir-fry chayote recipe:
Ingredients:
· 2 tablespoons vegetable oil
· 2 chayote squashes, washed and chopped (with or without skin, pit removed)
· 2 garlic cloves, minced
· 2 tablespoons soy sauce
· 1 teaspoon sesame oil
· Salt and pepper, to taste
· Sesame seeds, for garnish
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chopped chayote squash and stir-fry for 2-3 minutes until they soften.
3. Add the garlic and stir-fry for another 2-3 minutes.
4. Stir in the soy sauce and sesame oil, and season with salt and pepper to taste. Cook for an additional minute to combine flavors.
5. Garnish with sesame seeds before serving.
